🍞 Ingredients

Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt.

Mix the wet ingredients: In a separate bowl, thoroughly whisk the milk, egg, raw tahini, and vanilla extract until you get a smooth batter. (Tip: If your tahini is very thick or clumpy, whisk it first with a splash of the milk to loosen it up).

Combine the batters: Pour the wet mixture into the bowl of dry ingredients. Gently mix with a spoon or whisk only until the flour is incorporated and there are no large lumps. It is important not to overmix so your pancakes turn out light and fluffy.

Fry: Heat a non-stick skillet over medium heat and grease it lightly. Using a ladle or a small measuring cup, pour about 1/4 cup of the batter into the pan to form each pancake.

Flip: Once small bubbles appear on the surface of the pancake and the edges look set (after about 2 minutes), gently flip it with a spatula. Fry for about another minute until the other side is golden brown.

Serve: Transfer to a plate and repeat the process with the remaining batter.

1 cup flour (all-purpose or spelt)

• 1 tbsp baking powder

• 2 tbsp sugar or maple syrup

• 1 cup milk or a plant-based alternative

• 1 egg

• 3-4 tbsp of Beautiful Middle East tahini

• 1 tsp vanilla extract
